Vegetable Jalfrazi

Vegetable Jalfrazi, 4-5 servings

1 large onion
2 green peppers
2 large tomatoes
1/2 lb. broccoli
1/2 lb. cauliflower
4 tbsp margarine
1 tsp red chili powder
1/2 tsp turmeric
1 ginger
3 cloves garlic
2 tbsp white vinegar
2 tbsp tomato puree
1-1/2 tsp salt

Chop onion, cut green peppers, tomatoes, broccoli, and cauliflower into 1″ cubes.
Melt margarine and saute onion.
Add all remaining vegetables and stir-fry for about 5 minutes over medium heat.
Add the spices and vinegar.
Stir in the tomato puree, and simmer for about 5 minutes. Season to taste with salt and fresh-ground pepper.
